- 2 large organic plum tomatoes, deseeded and finely diced
- 1/3 cup chopped coriander
- 1/4 cup organic red onion, finely chopped

- 1 Tbsp. organic lemon or lime juice (plus extra to serve)
- 3 Tbsp. extra virgin olive oil

Pico de Gallo Salsa
For the salsa:
